Vegan Meatloaf
Ingredients
- Green Lentils 5 oz
- Oats 0 oz
- Mushrooms 5 oz
- Wheat Bran 5 teaspoons
- Flaxseed Meal 2 tablespoons
- Soy Textured Protein 0 oz
- Tomato Paste 2 tablespoons
Step-by-Step Guide
Step 1
Cook the lentils until tender, according to the package instructions, then let cool slightly.
Step 2
Soak the soy protein in water for 20 minutes, then drain the water.
Step 3
Thaw the frozen corn.
Step 4
Blend all ingredients except for the tomato paste. Season with salt and pepper to taste, and optionally add other spices like curry, red chili pepper, or a pinch of dried rosemary.
Step 5
Transfer the mixture to a greased rectangular baking dish. You can line the dish with parchment paper for easier removal of the finished meatloaf. Smooth the top of the meatloaf and generously spread tomato paste on top.
Step 6
Bake for 45 minutes at 300°F. Then turn off the oven and leave the loaf to cool inside. Slice the finished meatloaf.
