Ingredients

  • Water 10 fl oz
  • Honey 2 tablespoons
  • Sugar ½ cup
  • Vegetable Oil ½ cup
  • Wheat Flour 2 cups
  • Salt a pinch
  • Activated Baking Soda 1½ teaspoons
  • Raisins to taste
  • Bitter to taste
  • Coconut flakes to taste

Step-by-Step Guide

Step 1

First, boil the water. The water must be boiled. Let it cool down so that it is hot, but not boiling.

Step 2

In a deep bowl, pour in the water, add honey, sugar, a pinch of salt, and vegetable oil (neutral, very important!). Mix thoroughly until smooth.

Step 3

Sift the flour. Mix it with baking soda. Add it to our liquid mixture and whisk with a fork or whisk until lumps disappear. (Important: the gluten content in flour varies, I used about 2 cups, not full cups, do not add all the flour at once; the batter should be pourable, thinner than pancake batter).

Step 4

Optionally, you can enhance it by adding dried fruits, nuts, or anything else to taste. I added 3 handfuls of raisins.

Step 5

Pour the batter into molds, filling them about ⅔ full, as the muffins will rise. Bake in a preheated oven at 200°C (392°F) for about 10-20 minutes. You will see they are ready when the muffins acquire a brown-golden color.

Step 6

At this point, the muffins are ready. They can be served as is. But I prepared a glaze separately: I melted half a bar of bitter chocolate with a small amount of water in a double boiler. I mixed it well. I dipped each muffin in this glaze and then in coconut flakes. The taste is amazing and they are eaten immediately.
