Ingredients
- Glutinous Rice Flour 5 oz
- Salt a pinch
- Baking Powder 1 teaspoon
- Water 10 fl oz
- Vegetable Oil 5 fl oz
- Aquafaba 1 cup
- Mini Chocolate Chips 5 oz
- Coconut Liqueur 5 fl oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
In a bowl, mix the white rice flour, salt, and baking powder.
Step 3
In a saucepan, bring the water and oil to a boil. As soon as they boil, pour them into the dry ingredients and mix until smooth.
Step 4
Grease a baking sheet with the remaining vegetable oil and use a spoon to place the dough in the shape of balls, spaced 2–3 cm apart (you can use a pastry bag to pipe 'proper' long eclairs).
Step 5
Bake in the preheated oven for 30 minutes. Turn off the oven and poke the end of each eclair with a sharp knife. Leave the eclairs in the oven with the door slightly open until the oven cools completely.
Step 6
Once the eclairs are completely cool, you can fill them.
Step 7
Melt the chocolate chips in a double boiler. Mix the chocolate with the whipped cream.
Step 8
Coat the eclairs with the chocolate filling.
