Vegan Cornbread
Ingredients
- Flaxseeds 2 tablespoons
- Water 6 tablespoons
- Wheat Flour 1 cup
- Cornmeal 1 cup
- Sugar ¼ cup
- Baking Powder 4 teaspoons
- Salt ¾ teaspoon
- Soy Milk 1 cup
- Canola Oil ¼ cup
Step-by-Step Guide
Step 1
Preheat the oven to 200°C (400°F). Grease a 20 cm (8 inch) square baking dish with oil.
Step 2
Boil water in a small saucepan. Add ground flaxseeds. Reduce heat and cook the flaxseed mixture, stirring occasionally, for 3 minutes or until it thickens. Remove the saucepan with the flaxseed mixture from the heat.
Step 3
In a medium bowl, mix the wheat flour, sugar, cornmeal, baking powder, and salt. Add the flaxseed mixture, soy milk, and canola oil. Stir until well combined.
Step 4
Pour into the baking dish. Bake for 20-25 minutes or check for doneness with a toothpick. Cool on a rack for 10 minutes. Then turn it over, placing it right side up. Cool for another 10 minutes.
