Vegan Cauliflower Soup
Ingredients
- Cauliflower 20 oz
- Salad Potatoes 4 pieces
- Carrot 1 piece
- Onion 1 piece
- Orange Bell Peppers 1 piece
- Garlic 3 cloves
- Vegetable Oil 5 fl oz
- Salt 1 tablespoon
- Bay leaf 2 pieces
- Green peppercorns 8 pieces
- Ground coriander 1 teaspoon
- Ground clove 1 teaspoon
Step-by-Step Guide
Step 1
Wash and peel the vegetables. Break the cauliflower into florets. Grate the carrot on a coarse grater. Dice the onion, potatoes, and pepper.
Step 2
Heat the oil in a deep pot or cauldron. Add the coriander and cloves to the hot oil. Without wasting time, add the onion, carrot, pepper, and potatoes in turn.
Step 3
When the vegetables are browned, pour in water to stew the potatoes. Salt the water, add the black peppercorns and bay leaves. Cover with a lid and simmer until the potatoes are cooked.
Step 4
Meanwhile, in a separate pot, boil the cauliflower florets in salted water. Their readiness is determined by their softness.
Step 5
Once the cauliflower is cooked, drain the broth into a container, and transfer the soft florets to the pot with the stewed vegetables and add the garlic. Using a blender, puree everything, gradually adding the broth until the desired consistency is achieved.
Step 6
After blending, bring the soup to a boil and remove from heat. Serve after 8 minutes, garnishing each bowl with fragrant ground pepper, herbs, and a spoonful of olive oil.
