- Coarsely Ground Rye Flour 20 oz
- Water 10 fl oz
- Salt 0 oz
- Dry yeast 0 oz
- Peeled chestnuts 5 oz
- Coarse Cornmeal to taste

In a bowl, mix the flour, water, yeast, and salt. Knead the dough for at least 10 minutes — this affects the bread's fluffiness. Transfer to an oiled bowl, cover with a towel, and let it rest for 1 hour.

Then, fold in the whole nuts and shape the dough into a loaf or a round bread.

Place the dough on a baking sheet sprinkled with cornmeal, cover with a towel, and let it rest for 1 hour.

Meanwhile, preheat the oven to 430°F.

Bake the bread for 35–45 minutes, then reduce the temperature to 390°F and bake for another 10 minutes.
