Vegan Banana Buns
Baking and Desserts • American
Description
Best enjoyed warm or reheated in the microwave after cooling. If you're looking for an entirely unsweetened option, you can omit the bananas, slightly increase the amount of oil, and add some grains (semolina or unsweetened baby cereal mix for porridge (buckwheat), quick-cook buckwheat flakes without additives). Replace half of the all-purpose flour with rye flour. Substitute vanilla with dried dill and increase the amount of salt. This will give you flavorful buns.
Ingredients
- Bananas 2 pieces
- Flaxseeds 2 spoons
- Vegetable Oil 2 spoons
- Wheat Flour 1½ glasses
- Baking Powder 2 spoons
- Oat flakes 1 glass
- Salt ¼ spoons
- Water 3 spoons
- Nut crumb ¼ glasses
Step-by-Step Guide
Step 1
Preheat the oven to 355°F in the bake setting, top and bottom.
Step 2
Soak the dry flaxseed in 3 tablespoons of boiling water to allow it to release its mucilage.
Step 3
Mash the bananas. Add vegetable oil (it should be odorless) and then flaxseed meal.
Step 4
In a separate bowl, combine the dry ingredients: sifted flour, flakes, powder, salt, and nuts.
Step 5
Add the banana puree to the flour mixture. Form a dough. If it is too stiff or the flour is not moist enough, you can add a little warm boiled water. The dough should have a consistency that allows you to shape it into rolls by hand.
Step 6
Line a baking sheet with parchment paper. Grease it with vegetable oil. Using hands moistened with water, take small portions (about 1.5 tablespoons) of dough and shape them into rolls of any form (they can be round, rectangular, or small bars).
Step 7
Garnish the buns with oatmeal and bake them for 20–25 minutes, checking to ensure they are cooked through and not left raw.
