Ingredients

  • Coarsely Ground Rye Flour 1 cup
  • Wheat Flour 1 cup
  • Olive Oil 4 tablespoons
  • Water ½ cup
  • Salt to taste

Step-by-Step Guide

Step 1

Sift the flour, mix it, and form a mound.

Step 2

Make a well in the center, pour in the oil, add salt and a little water. Start kneading the dough. Gradually add water, watching how much the dough absorbs - it should be firm and not stick to your hands.

Step 3

Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Step 4

Roll out into sausages (I make them about 1 cm thick and 10-13 cm long). Shape into bagels. This yields about 30 pieces.

Step 5

Drop the bagels into boiling water. Boil until they float. Place on a colander to drain.

Step 6

Place the bagels on a greased baking sheet. Bake in a preheated oven at 390°F until golden brown. I turn the bagels to ensure they are browned on both sides.
