Description

Vegan Apple Muffins

Ingredients

  • Wheat Flour 5 oz
  • Sugar 0 oz
  • Baking Powder 1½ teaspoons
  • Vegetable Oil 4 tablespoons
  • Applesauce 10 oz
  • Cinnamon 1 teaspoon

Step-by-Step Guide

Step 1

In a bowl, mix the flour with sugar, then add baking powder, cinnamon, and dried apricots.

Step 2

In another bowl, make a mixture of vegetable oil and applesauce. You can use store-bought applesauce or make your own by baking peeled apples and blending them until smooth.

Step 3

Pour the apple mixture into the flour and quickly stir to avoid lumps.

Step 4

Grease the muffin tins with vegetable oil or line them with parchment paper, then pour the batter to fill the molds about three-quarters full. Smooth the tops with a wet spoon.

Step 5

Bake the muffins at 355°F for about 30 minutes. Keep an eye on them: when the muffins turn golden, they are ready. To be sure, check for doneness with a wooden stick.

Step 6

Cool and dust with powdered sugar (or drizzle with jam or thick fruit sauce) if desired.
