Ingredients
- Chopped almonds 5 oz
- Meyer Lemon Juice ¼ cup
- Olive Oil 3¼ tablespoons
- Garlic 1 clove
- Salt 1¼ tablespoons
- Thyme 1 teaspoon
- Fresh Rose Hips 1 teaspoon
Step-by-Step Guide
Step 1
Place the almonds in a medium bowl, cover with water, and let soak for 24 hours. Drain and rinse.
Step 2
Blend the almonds, 3 tablespoons of olive oil, garlic, salt, and 120 ml of water until smooth.
Step 3
Strain the mixture through cheesecloth. Roll the mixture into a ball and refrigerate for about 12 hours.
Step 4
Next, place the mixture on a baking sheet and bake for about 40 minutes, then cool.
Step 5
Over medium heat, bring ¼ cup of olive oil and the herbs to a boil. Allow to cool to room temperature and drizzle the mixture over the prepared cheese.
