Description
A hallmark of Slavic pastry, vatrushki are well-known. While we are accustomed to those filled with cottage cheese, they can have a variety of fillings—from potatoes to jam. For our special collection, we featured a recipe for these delightful pastries, of course, with cottage cheese.
Ingredients
- Milk 10 fl oz
- Dry yeast 0 oz
- Sugar 5 oz
- Butter 5 oz
- Chicken Egg 3 pieces
- Salt ½ spoons
- Cottage cheese 20 oz
- Sour Cream 5 oz
- Vanilla salt 2 spoons
- Wheat Flour 15 oz
Step-by-Step Guide

Prepare the necessary ingredients
Step 2
Mix warm milk with the yeast and 1 tablespoon of sugar, add 150 grams of flour, stir, and place the mixture in a warm spot for 15 minutes.
Step 3
Mix the starter and 2 eggs.
Step 4
Add the softened butter, 0.5 teaspoons of salt, and 85 grams of sugar, and mix well.
Step 5
Add the remaining flour and knead the dough. Cover with plastic wrap and place in a warm area to let the dough rise. This will take 30 to 60 minutes.
Step 6
Punch down the risen dough, cover it with plastic wrap again, and let it rise once more. This will take about another 30 minutes.
Step 7
For the filling, mix the cottage cheese with sugar, vanilla sugar, and sour cream.
Step 8
Form fifteen to twenty balls from the dough, place them on a baking sheet, and slightly flatten them.
Step 9
Brush them with beaten egg, make indentations in the buns, and fill them with the cheese filling.
Step 10
Place the pastries in an oven preheated to 355°F and bake for 20–25 minutes.
