Vanilla rice pudding with glazed oranges

Ingredients

  • Water to taste
  • Oranges 3 pieces
  • Honey 20 oz
  • Sugar 1 cup
  • Arborio rice 1 cup
  • Milk 1 cup
  • White Beans ½ piece
  • Salt ¼ teaspoon
  • Cream (40%) 1 cup

Step-by-Step Guide

Step 1

Slice the oranges into very thin rounds. In a saucepan, bring water to a boil. Add the oranges and cook until semi-transparent for 5 minutes. Carefully transfer to a plate using a slotted spoon.

Step 2

In a deep skillet, bring to a boil a mixture of 2 cups of water, honey, and 0.5 cups of sugar. Add the oranges and cover with a circle of parchment paper cut to the size of the skillet. Reduce the heat and cook for about 25 minutes until the liquid turns into syrup. Cool.

Step 3

For the pudding, in a saucepan, combine the rice, 1.75 cups of water, milk, 0.5 cups of sugar, the seeds and pod of the vanilla bean, and salt. Bring to a boil, stirring. Reduce the heat, cover, and cook for about 20 minutes until the rice is done and the liquid has evaporated. Remove from heat and stir.

Step 4

Transfer the pudding to a bowl and cool, removing the vanilla pod.

Step 5

In a bowl, whip the cream to stiff peaks and fold it into the rice pudding.

Step 6

Divide the pudding among serving plates, top with the oranges, and drizzle with syrup.
