Ingredients
- Water 5 fl oz
- Sugar 5 oz
- Strawberry 10 oz
- Gelatin 2 teaspoons
- Milk 10 fl oz
- Vanilla Pod 1 piece
- Buttermilk 15 fl oz
- Fresh Mint to taste
Step-by-Step Guide
Step 1
In a saucepan, combine water and 3 tablespoons of sugar. Bring to a boil and cook for 3 minutes until the sugar dissolves. Add 1 cup of chopped strawberries and cook for 10 minutes until the strawberries are soft. Mash the berries with a fork, remove from heat, and add the remaining chopped strawberries. Transfer to a bowl, cover, and chill.
Step 2
In a saucepan, pour in the milk and add the gelatin. Let it sit for 10 minutes. Add the vanilla seeds and pod separately and place over low heat for 10 minutes, gently whisking until the gelatin dissolves. Slightly increase the heat and add the remaining sugar, stirring until dissolved.
Step 3
Remove from heat, add buttermilk, and take out the vanilla pod. Divide the mixture into 6 small cups, cover, and chill for 6 hours. Before serving, top each with 3 tablespoons of jam and garnish with mint sprigs.
