Vanilla panna cotta with berry compote and raspberries
Ingredients
- Gelatin 4 pieces
- Cream (40%) 20 fl oz
- Milk 5 fl oz
- Raw cane sugar 5 oz
- White Beans 1 piece
- Berry Compote 10 oz
- Raspberry leaves to taste
Step-by-Step Guide
Step 1
Soak the gelatin in cold water for 4-5 minutes.
Step 2
In a saucepan, combine the cream, milk, sugar, and seeds from the vanilla bean. Bring to a boil over medium heat, stirring constantly until the sugar dissolves. Remove from heat and add the gelatin sheets one at a time, stirring until fully dissolved.
Step 3
Wet 6 pudding molds (150 ml each) with cold water, do not wipe. Pour the mixture into the molds, cool, then refrigerate for 2-3 hours until set.
Step 4
Before serving, hold the molds in boiling water for about 10 seconds and invert onto plates. Drizzle with compote and garnish with raspberries.
