Vanilla galette with berries and apricot
Ingredients
- Frozen black currant puree ½ cup
- Gooseberry ½ cup
- Fresh Berries ½ cup
- Butter 5 oz
- Wheat Flour 10 oz
- Egg white 1 piece
- Sugar 5 oz
- Vanilla salt to taste
- Canned Peaches 8 pieces
Step-by-Step Guide
Step 1
Soften the butter (100 g) and rub it with the flour until crumbly.
Step 2
Add the egg and vanilla sugar (to your taste) to the crumbly butter-flour mixture.
Step 3
Knead a soft, elastic dough (similar in consistency to playdough). Place the dough in the refrigerator while preparing the filling.
Step 4
Heat a skillet over medium heat and add the butter (50 g). Add the berries (any berries of your choice) to the skillet and simmer for 5–7 minutes, stirring. Add sugar (the amount of sugar varies depending on the tartness of the berries) and simmer for another 5–7 minutes.
Step 5
Prepare the apricots — slice them into not too thick wedges (I specifically use canned ones as they are sweeter).
Step 6
Roll out the chilled dough to a diameter of about 30 cm and transfer it to parchment paper.
Step 7
First, spread the berry filling on the dough, leaving uncovered edges of 2–3 cm (for folding), then place the apricots on top. Fold the edges.
Step 8
Bake in a preheated oven at 390°F for 20–25 minutes. The finished pie can be dusted with powdered sugar.
