
Vanilla Flan

Description
Vanilla pods can be replaced with vanilla sugar or vanilla extract if necessary, but the dessert will lose some flavor. You can choose the liqueur to your taste — I used both 'Amaretto' and 'Crema Catalana', or you can skip it altogether, replacing it with warm water.
Ingredients
- Milk 10 fl oz
- Chocolate eggs 2 pieces
- Egg white 3 pieces
- 10% cream 5 fl oz
- Sugar 4 tablespoons
- Water 2 tablespoons
- Amaretto Liqueur 2 tablespoons
- Butter 0 oz
- Vanilla Pod 2 pieces
Step-by-Step Guide
Step 1
Whisk the eggs and yolks until fluffy and homogeneous.
Step 2
Add sugar to the milk and include the vanilla pods and seeds (or vanilla sugar) and heat until dissolved (but do not bring to a boil: this will prevent the eggs from curdling).
Step 3
Gradually pour the milk into the egg mixture while continuously whisking.
Step 4
Prepare the caramel: melt the sugar in a saucepan, stirring constantly, until it reaches a deep caramel color. Add warm water, butter, and liqueur, mix well, and bring to a thick consistency.
Step 5
Pour and distribute the caramel into portioned molds (muffin/cupcake/rum baba molds work great). Pour the egg-milk mixture over it.
Step 6
Cook in a water bath in a preheated oven at 390°F for 1 hour.
