Vanilla, chocolate, and coffee meringues in chocolate glaze
Ingredients
- Egg white 3 pieces
- Vanilla extract 1 teaspoon
- Cream of tartar a pinch
- Sugar ¾ cup
- Instant coffee 1½ teaspoons
- Cocoa Powder 2 tablespoons
- 70% Dark Chocolate 5 oz
- Vegetable Oil 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 205°F. Line 2 baking sheets with parchment paper.
Step 2
Using a mixer, beat 1 egg white with vanilla, a pinch of cream of tartar, and a pinch of salt. Add 2 tablespoons of sugar and beat well again. Then add another 2 tablespoons of sugar.
Step 3
Transfer the mixture to a piping bag and pipe meringues in the shape of stars onto the baking sheet.
Step 4
For the coffee meringues, repeat the process, but instead of vanilla, add instant coffee.
Step 5
For the chocolate meringues, mix cocoa with 2 tablespoons of sugar. Beat the remaining egg whites with a pinch of cream of tartar and salt until stiff peaks form. Add 2 tablespoons of sugar, beat well, then incorporate the chocolate mixture. Transfer the mixture to a piping bag and pipe in the shape of stars.
Step 6
Bake the meringues for 1.5 to 2 hours until crispy and dry. Then turn off the oven and leave the baking sheet inside for another hour. Remove from the oven and cool on the baking sheet.
Step 7
Melt the chocolate in a double boiler and mix with vegetable oil. Dip the bottoms of the meringues in the chocolate and transfer to a parchment-lined baking sheet. Place in the freezer for 3 minutes until the chocolate sets.
