  • Vanilla salt 0 oz
  • Milk 5 fl oz
  • Baking Powder 2 spoons
  • Wheat Flour 5 oz
  • Plums 20 oz
  • Chicken Egg 2 pieces

Step-by-Step Guide

Step 1

It's best to start with preparing the filling, that is, the plums. Choose ones that are ripe but firm, as they are easier to separate from the pit. In a deep skillet, melt about 50 grams of butter, then add sugar, stirring gently until bubbles start to form. Once the bubbles appear, add the plums (cut in half) with the skin side up. After another minute, remove from heat and let them cool.

Step 2

For the dough, add sugar and vanilla sugar (or separately, vanilla powder) to the butter (130 grams). Mix everything together, but do not whip. Add 2 eggs and milk. Do not overmix the dough, as this will cause whey to separate. Finally, add the sifted flour and baking powder (for a twist, you can add nuts, such as almonds; I added nutmeg to the milk) — the dough should have the consistency of thick sour cream.

Step 3

Now we assemble it — it bakes upside down. First, place the plums in the baking dish, making sure there isn’t too much syrup; I also added a bit of cloves. Pour the batter on top and send it to the oven at 355°F for about 30 minutes, checking with a toothpick.
