
Upside-Down Peach Pie

For a pie with a diameter of 24–26 cm.
Ingredients
- Donut Peaches 6 pieces
- Butter 0 oz
- Cream 22% 5 fl oz
- Sugar 2 cups
- Vanilla extract 2 teaspoons
- Farm fresh eggs 4 pieces
- Wheat Flour 1½ cups
Step-by-Step Guide
Step 1
For the fruit topping, you will need 6–7 ripe peaches; 0.5 cups of sugar (or less); 30 grams of butter.
Step 2
For the batter, you will need 180 grams of butter; 85 ml of cream; 1.4 cups of sugar; 2 teaspoons of vanilla extract; 4 large eggs; 1.5 cups of flour.
Step 3
Line a baking dish with parchment paper, grease with butter, and arrange the halved peaches/apricots/nectarines cut side up, evenly sprinkle with sugar.
Step 4
Let the fruit release its juices while we prepare the batter: beat together the butter, cream, sugar, and vanilla extract for about three minutes, then, continuing to beat, add the eggs one at a time.
Step 5
Gradually add the sifted flour and beat for another three minutes.
Step 6
Chop the remaining peaches (in my case) into small cubes and gently mix them into the batter. Pour the resulting mixture over the arranged peaches, sprinkle with brown sugar (I did not sprinkle), and place in a preheated oven at 355°F for one hour. Check for doneness with a toothpick (if it comes out dry, it's ready), cool on a rack. Invert onto a plate.
