Ingredients

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Water 1 tablespoon
  • Salt a pinch
  • Egg white 1 piece
  • Sugar 5 oz
  • Apple 2 pieces
  • Calvados 2 tablespoons
  • Orange zest 1 piece

Step-by-Step Guide

Step 1

For the dough: sift the flour and salt, make a well in the center, add 70 g of cold, diced butter and mix.

Step 2

Beat the egg into the dough. Mash, add ice water, and knead.

Step 3

Refrigerate for half an hour.

Step 4

For the filling: peel the apples and cut them into wedges. Also, peel the orange.

Step 5

In a skillet, melt the sugar and 50 g of butter, then pour in the Calvados. Let it melt.

Step 6

Arrange the fruits on the caramel and cover with the dough, then place in the oven at 355°F for 35–40 minutes. The dough should be pricked with a fork beforehand.
