Ukrainian Pickled Eggplant Soup
Ingredients
- Eggplants 3 pieces
- Tomatoes 2 pieces
- Vinegar essence 3 tablespoons
- Salt to taste
- Garlic 1 clove
- Onion 1 head
- Olive Oil 3 tablespoons
- Ground Black Pepper to taste
- Chicken Broth 15 fl oz
- Bay leaf 1 piece
- Sugar 1 tablespoon
- Salad Potatoes 2 pieces
Step-by-Step Guide
Step 1
Slice the eggplants into rounds and marinate with salt, vinegar, and garlic for 15 minutes. Then squeeze out excess water and fry in olive oil until golden brown.
Step 2
Chop the onion and sauté in olive oil with salt.
Step 3
Dice the potatoes.
Step 4
Peel the tomatoes, slice them, and combine with the onion, potatoes, and eggplants. Pour cold broth over the vegetables and bring to a boil. Add salt, pepper, bay leaf, and cook until done.
