Ingredients
- Meat 20 oz
- Potato 15 oz
- White Cabbage 15 oz
- Beetroot 10 oz
- Sour Cream 5 teaspoons
- Tomato Puree ½ glasses
- Onion 1 piece
- Butter 1 tablespoon
Step-by-Step Guide
Step 1
Cook the meat broth and strain it.
Step 2
Peel and julienne the root vegetables and beetroot. Sauté the beetroot for 20-30 minutes, adding fat, tomato paste, vinegar, and broth (you can also add bread kvass or beet kvass). Lightly fry the chopped root vegetables and onion in oil, mix with toasted flour, dilute with broth, and bring to a boil.
Step 3
In the prepared broth for the borscht, add diced potatoes, coarsely chopped cabbage, sautéed beets, salt, and cook for 10-15 minutes. Then, add the sautéed root vegetables mixed with flour, bay leaf, and both sweet and bitter pepper, and continue cooking until the potatoes and cabbage are tender.
Step 4
Finish the borscht by stirring in the lard mixed with garlic, add the tomatoes cut into wedges, quickly bring to a boil, then let the borscht steep for 15-20 minutes.
Step 5
When serving in bowls, add sour cream to the borscht and sprinkle with finely chopped parsley.
