Ukrainian Bean Soup
Ingredients
- Beans 5 oz
- Pickled Cauliflower 5 oz
- Salad Potatoes 3 pieces
- Butter 0 oz
- Sour Cream 0 oz
- Onion 2 heads
- Parsley 1 stalk
- Carrot 1 piece
- Cucumber Brine 3 tablespoons
- Celery salt 1 stalk
- Green peppercorns 10 pieces
- Bay leaf 1 piece
- Salt to taste
- Egg white 2 pieces
- Herbs 0 oz
Step-by-Step Guide
Step 1
Soak the beans for several hours.
Step 2
Boil the beans in salted water. Drain and dry the beans.
Step 3
Peel the pickled cucumbers, cut them into strips, and blanch in a small amount of water.
Step 4
Chop the onion, carrot, parsley root, and celery, and sauté in butter.
Step 5
Pour water into the bean broth and bring to a boil.
Step 6
Peel and dice the potatoes and cook until half-done. Add the sautéed vegetables and cook for 7-10 minutes.
Step 7
5 minutes before the end of cooking, add the boiled beans.
Step 8
Bring the cucumber brine to a boil and pour it into the soup. Add black peppercorns, bay leaf, and salt.
Step 9
Remove from heat and stir in the beaten egg yolk mixed with sour cream. Garnish with finely chopped herbs.
