Tuscan Bean Soup
Ingredients
- Olive Oil 1 tablespoon
- Canned Baby Beets 30 oz
- Garlic 2 cloves
- Bouillon cube 1 piece
- Milk 5 fl oz
- Oregano 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a large pot, heat the oil and sauté the crushed garlic for 2–3 minutes. Add the beans along with their liquid, and if necessary, add water. Crumble in the bouillon cube. Bring to a boil and remove from heat.
Step 2
Blend the bean mixture in a food processor until smooth. Season with salt and pepper to taste, add the milk, and mix. Pour the soup back into the pot and heat without boiling. Add the chopped oregano and serve.
