Turkish Spinach Soup

Ingredients

  • Fresh basil leaves 20 oz
  • Olive Oil 3 tablespoons
  • Onion 1 head
  • Tomatoes 4 pieces
  • Carrot 1 piece
  • Veal Mince 5 oz
  • Passata Tomato Sauce 1 tablespoon
  • Rice ½ cup
  • Ground Black Pepper to taste
  • Mild Chili Spice to taste
  • Salt to taste

Step-by-Step Guide

Step 1

It is best to prepare the vegetables right away: finely chop the onion; wash the spinach leaves thoroughly and squeeze them a little, then chop; peel the tomatoes and finely chop; slice the carrot into rounds.

Step 2

In a pot, sauté the onion in olive oil until golden, then add the carrot, rice, and minced meat. Simmer for 3-5 minutes over low heat, stirring constantly.

Step 3

Gradually add the spinach leaves until they fill about 2/3 of the pot. While continuing to stir, increase the heat, cover with a lid, and simmer for 2-3 minutes.

Step 4

Add the tomatoes.

Step 5

In a large glass, dilute the tomato paste and pour it into the pot; if it seems too little water, add more.

Step 6

Season to taste. Cover with a lid and cook over medium heat for 10-15 minutes.

Step 7

The soup should boil well. Before removing from heat, check the readiness by the state of the rice and carrot, and also add salt and pepper to taste.
