Turkish Apple Pie
Baking and Desserts • Turkish
Description
For baking, a 24 cm diameter pan is required.
Ingredients
- Wheat Flour 10 oz
- Baking Powder 3 teaspoons
- Butter 10 oz
- Sugar 5 oz
- Sour Cream 2 tablespoons
- Apple 6 pieces
- Ground Cinnamon 1 teaspoon
- Powdered Sugar 5 tablespoons
Step-by-Step Guide
Step 1
Sift 275 grams of flour and mix it with the baking powder.
Step 2
Combine 225 grams of butter with 175 grams of granulated sugar. Whip until the sugar granules are completely dissolved. Gradually increase the mixer speed from low to high. After about 10–12 minutes of intensive mixing, the butter will acquire a fluffy, smooth texture. Add 2 tablespoons of sour cream and mix again at medium speed until homogeneous for 2–3 minutes.
Step 3
Next, gradually incorporate the flour and baking powder mixture. Add the flour gradually. Form the finished dough into a ball, cover it with a kitchen towel, and let it rest for 10–15 minutes.
Step 4
Wash the apples, peel them, and grate them on a coarse grater. Allow the grated apples to sit and release their juice. Afterward, squeeze out the excess liquid by hand, add 1 teaspoon of ground cinnamon, 4 tablespoons of powdered sugar, and mix until a uniform consistency is achieved.
Step 5
Now sprinkle the kitchen counter with a small layer of flour (5 grams), place the dough on it, and divide it into 2 equal parts. Return one part to the bowl and roll out the other into a sheet about 5–7 millimeters thick. Its size should be slightly larger than the bottom of the baking pan. Roll the sheet of dough onto a rolling pin, transfer it to the baking tray (greased with the remaining butter), and flatten the bottom layer with clean fingers across the entire base of the container.
Step 6
Then immediately spread the apple filling evenly on top.
Step 7
Roll out the second part of the dough in the same way and cover the filling with it. Pinch the edges of the two dough layers tightly to avoid any gaps.
Step 8
Bake for 25–30 minutes until a light golden crust forms at a temperature of 355°F. Allow the baked pie to cool to room temperature, then dust it with powdered sugar to taste.
