Turkey Cream Soup with Truffles

Ingredients

  • Ground Black Pepper to taste
  • Onion 1 head
  • Salt to taste
  • Celery salt 5 oz
  • Butter 0 oz
  • Chicken Broth 20 fl oz
  • Roll 1 piece
  • 33% Cream 5 fl oz
  • Black truffles 1 piece
  • Chicken fillet 10 oz
  • Truffle Oil to taste

Step-by-Step Guide

Step 1

Boil the turkey fillet in boiling water until cooked. Cool and cut into small pieces.

Step 2

Melt the butter in a pot and sauté the finely chopped celery and a small finely chopped onion for 20 minutes until soft. Season with salt and pepper.

Step 3

Add the crumbled roll (preferably stale) and broth. Bring to a boil, reduce heat, and simmer for 15-20 minutes.

Step 4

Blend the soup in a blender or strain through a sieve. Pour into a clean pot.

Step 5

Add the cream, sliced truffle, and finely chopped turkey meat. Serve in bowls, drizzled with truffle oil and sprinkled with freshly ground black pepper.
