Turkey and Mushroom Soup
Ingredients
- Water 5 fl oz
- Chicken Broth 25 fl oz
- Oregano 1½ teaspoons
- Ground Black Pepper 1⅖ teaspoons
- Garlic 3 cloves
- Onion 1 piece
- Carrot 1 piece
- Fresh Mushrooms 10 oz
- Olive Oil 1 tablespoon
- Butter 0 oz
- Wheat Flour 3 tablespoons
- Milk 10 fl oz
- Chicken fillet 20 oz
- Rice 5 oz
Step-by-Step Guide
Step 1
In a small pot over high heat, bring the chicken broth and water to a boil.
Step 2
Meanwhile, cut the turkey into 8 equal pieces to reduce cooking time.
Step 3
Add the turkey pieces, oregano, and pepper to the boiling broth. It should come to a boil again, then reduce the heat, cover the pot, and simmer for 15 minutes. Remove the turkey to a plate and cover it. Set the pot with the broth aside.
Step 4
In the meantime, chop the garlic and add the coarsely chopped onion.
Step 5
In the same bowl, grate the carrot coarsely and set aside. Chop the mushrooms coarsely.
Step 6
In another small pot over medium heat, heat the olive oil. It should be hot but not smoking. Add the garlic and onion and sauté for about 3 minutes until the onion is slightly soft.
Step 7
Add the butter, rice, carrot, and mushrooms, and sauté, stirring, for about 3 minutes.
Step 8
Add the flour, mix, and sauté for about 30 seconds until the flour is no longer visible. Pour in the broth and bring to a boil. Reduce the heat, cover, and simmer for about 20 minutes until the rice is tender.
Step 9
Meanwhile, cut the turkey into small pieces. When the rice is cooked, bring the soup to a boil over medium heat. Add the turkey and pour in the milk, cooking for about 2 minutes.
