Tuna Burger with Wasabi Mayonnaise

Ingredients

  • Soy Sauce to taste
  • Mayonnaise 0 oz
  • Pickled garlic 0 oz
  • Tuna 5 oz
  • Eel 0 oz
  • Wasabi to taste
  • Salad Potatoes 5 oz
  • Capers 0 oz
  • Shallot 0 oz
  • Salt a pinch
  • Vegetable Oil to taste
  • Hamburger Bun 1 piece

Step-by-Step Guide

Step 1

Cut the sesame bun in half. Chop the ingredients in the following order: capers, shallot, pickled ginger, tuna fillet. Place everything in a bowl. Add quail eggs and soy sauce. Season with salt and pepper. Mix thoroughly.

Step 2

Line a baking sheet with parchment paper. Form a patty from the mixture and place it on the parchment. Bake in the oven at 190°C (374°F) for 5 minutes.

Step 3

Heat a skillet with vegetable oil. Warm the boiled potatoes cut in half. Peel and chop the garlic. Add the potatoes to the skillet.

Step 4

Place another skillet on the heat. When it is hot, toast the buns for 1-2 minutes until golden brown. Add the garlic to the potatoes. Sauté the potatoes for a couple more minutes and transfer them to a paper towel to drain excess fat.

Step 5

Add wasabi to the mayonnaise. Mix well. Assemble the burger. Spread wasabi mayonnaise on the bun, then layer with: lettuce leaf, tuna patty, pickled ginger. Top with the other half of the bun. Cut the burger in half.

Step 6

Garnish the plate with watercress, sesame seeds, figs, and a lime wedge. Serve the burger with potatoes and wasabi mayonnaise.
