Description

This pie will be especially delicious with ayran, Kalmyk tea, or kefir.

Ingredients

  • Vegetable Oil 0 fl oz
  • Chocolate eggs 2 pieces
  • Sugar 0 oz
  • Salt 0 oz
  • Wheat Flour 15 oz
  • Dry yeast 0 oz
  • Suluguni Cheese 5 oz
  • Mustard Greens 5 oz
  • Russian Cheese 5 oz
  • Water 5 fl oz

Step-by-Step Guide

Step 1

Sift the flour and add salt and sugar. Pour in the water, yeast, and vegetable oil, and knead the dough. Cover the bowl with plastic wrap and let it sit for 2 hours until it doubles in size.

Step 2

Knead the dough again, divide it into 3 parts, roll them into balls, and cover with plastic wrap.

Step 3

Pour boiling water over the greens for a couple of minutes, drain in a colander, rinse with cold water, squeeze out the excess water, chop finely, and mix with salt. Lightly beat the eggs, add to the mashed cheese, then add the chopped greens and mix. Divide the filling into 3 parts and form a ball from each.

Step 4

Sprinkle the board with flour, flatten a portion of the dough with your hands into a pancake about 5–7 mm thick. Place a ball of the greens and cheese mixture in the center of the pancake, then gather the dough around it so that it tightly encloses the cheese and connects at the edges like a pouch, above the cheese. Fold the edges of the dough inward and pinch with your thumbs, then press down in the center with all fingers, working from the center to the edges to evenly distribute the filling inside the dough. Turn the pancake over and make a small hole in the center for steam to escape.

Step 5

Bake in the oven at 480°F for 15 minutes until golden brown. Remove, brush with melted butter, cover with a towel, and let sit for 5 minutes.
