Description

- Wheat Flour 5 oz
- Cocoa Powder 0 oz
- Baking Powder ½ spoons
- Salt a pinch
- Sugar 5 oz
- Butter 10 oz
- Chicken Egg 4 pieces
- Water 5 fl oz
- Chocolate 53% 5 oz
Step-by-Step Guide
Step 1
For the dough, mix together flour (150 grams), cocoa powder, salt, baking powder, and sugar (2 teaspoons); add butter (90 grams) and rub it in with your hands; add one lightly beaten egg and knead the dough; shape it into a ball and refrigerate for 30 minutes.
Step 2
Roll out the chilled dough and place it in the pan, creating a border. Cover with parchment paper, fill with baking beans, and bake for 15 minutes at 355°F.
Step 3
For the truffle filling, make a syrup from water and sugar. Lower the heat and add the chocolate (in pieces) and butter (135 grams); gently add three lightly beaten eggs (as for an omelet) to avoid curdling. Stir the mixture until everything is dissolved and smooth, then add the flour (20 grams) and mix again.
Step 4
Pour the filling into the baked shortcrust base, smooth it out, and bake for an additional 30–40 minutes (depending on the height of the pie) at 355°F.
