Dates provide us with dietary fiber and a plethora of vitamins! Strong teeth, bones, a robust immune system, a healthy heart, endurance, skin like a baby... Shall I continue? Or should I just mention that using them allows us to eliminate or significantly reduce refined sugar in our diet? To make beet powder, you need to dry thin slices of beet in a slightly open oven at a temperature of 50-60 degrees Celsius and then crumble the resulting beet chips. In the cashew version, use beet juice only as a coloring agent and flavor enhancer. The beet itself can be used for a salad or smoothie. To prepare the juice, you can grate the beet and squeeze the juice into a container. All natural candies should be stored only at low temperatures.

  • Dates 5 oz
  • Coconut Milk 1½ spoons
  • Coconut flakes 1 tablespoon
  • Cocoa Powder 3 spoons
  • Pecan 5 oz
  • Oat flakes ½ glasses
  • Dried Apricots 5 pieces
  • Chestnut puree ½ glasses
  • Maple syrup 1 tablespoon
  • Ocean salt a pinch
  • Cashew 5 oz
  • Coconut flakes 2 spoons
  • Honey 1 tablespoon
  • Beetroot 2 spoons
  • Meyer Lemon Juice 1 tablespoon
  • Pistachios to taste

Step-by-Step Guide

Step 1

Combine all the ingredients in a blender or food processor for one minute (until they are well mixed). For the basic chocolate recipe: 1 cup of dates, 1 1/2 tablespoons of coconut oil, 1 tablespoon of coconut flour, 3 teaspoons of cocoa powder. For pumpkin truffles: 1/2 cup of pecans or walnuts, 1/2 cup of oat flour, 5 pitted dates, 5 pieces of dried apricots, 1 tablespoon of coconut oil, 1/2 cup of thick pumpkin puree, 1 tablespoon of maple syrup, a pinch of sea salt. For cashew truffles with beet juice: 2/3 cup of cashews soaked overnight and rinsed, 4 tablespoons of oat flour, 4-5 tablespoons of shredded coconut, 2 tablespoons of coconut oil, 1 tablespoon of thick honey, 2 tablespoons of beet juice, 1 tablespoon of maple syrup, 1 tablespoon of lemon juice.

Step 2

Chill the resulting dough in the refrigerator for about 10 minutes.

Step 3

Next, shape the mixture into small balls, about the size of a ping-pong ball.

Step 4

Coat the truffles in cocoa powder, ground pistachios, beetroot powder, or shredded coconut.

Step 5

Before serving, place in the freezer for 20 minutes.
