
Tropical Crepe Dessert with Mango

Ingredients
- Milk 10 fl oz
- Egg white 1 piece
- Wheat Flour 5 oz
- Sugar 3 tablespoons
- Salt a pinch
- Coconut Milk 5 fl oz
- Brandy 5 fl oz
- Peach Juice 1 cup
Step-by-Step Guide
Step 1
Mix flour, milk, one egg, sugar, and salt to make a liquid batter for the crepes.
Step 2
Cook thin, small diameter crepes and fold them into quarters.
Step 3
Place 3–4 crepe parcels in the skillet and let them heat up.
Step 4
Pour in a shot of brandy, ignite it, let it burn off, then add the mango juice and coconut milk.
Step 5
The crepes are fried in the syrup for 2 minutes on each side. The amount of syrup is to taste, but remember, it's syrup, not broth.
Step 6
Place on a serving plate and drizzle with the remaining syrup from the skillet.
Step 7
You can sprinkle with powdered sugar and/or shredded coconut.
