Traditional Strudel
Ingredients
- Wheat Flour 10 oz
- Chicken Egg 1 piece
- Vegetable Oil 3 tablespoons
- Salt a pinch
- Raisins 5 oz
- Rum 2 tablespoons
- Breadcrumbs 3 tablespoons
- Butter 6 tablespoons
- Powdered Sugar 2 teaspoons
- Cinnamon 1 teaspoon
- Sugar 10 oz
- Vanilla salt 0 oz
- Green Apples 4 pieces
- Lemon 1 piece
- Water 5 fl oz
- Nuts 5 oz
Step-by-Step Guide
Step 1
For the filling: soak the raisins in rum and let sit for an hour. Melt 2 tablespoons of butter with the breadcrumbs and vanilla sugar. Peel and dice the apples. Grate the lemon zest and squeeze the juice, then add it to the apples.
Step 2
Sift the flour, add the egg and 2 tablespoons of vegetable oil, and add salt. Gradually pour in the water and knead the dough. Roll it into a ball, brush with vegetable oil, and wrap in plastic wrap. Let it rest in a warm place for an hour.
Step 3
On a table, spread out a cloth and sprinkle it with flour. Roll out the dough into a flat round. Start stretching the dough in the air. When it becomes thin, lay it on the oiled cloth.
Step 4
Along the long side, sprinkle the breadcrumb mixture, leaving 10–15 cm from the edge of the dough. On top, add the apples, raisins, nuts, cinnamon, and sugar.
Step 5
Lift the edge of the dough closest to you and cover the filling along its entire length. Take the edge of the cloth and roll it with the dough towards the opposite side, forming a roll with the seam on the bottom.
Step 6
Grease a baking sheet with oil, place the strudel on it, trimming any excess dough. Twist the ends. Brush the top with oil and place in a preheated oven at 345°F for 40 minutes. Before serving, dust the cooled strudel with powdered sugar and drizzle with berry syrup.
