Traditional Finnish creamy salmon soup (lohikeitto)
Ingredients
- Salad Potatoes 6 pieces
- Turnips 2 pieces
- Onion 2 pieces
- Water 25 fl oz
- Green peppercorns to taste
- Bay leaf 1 piece
- Smoked haddock fillet 15 oz
- Cream 22% 5 fl oz
- Salt to taste
- Dill to taste
- Ground clove to taste
Step-by-Step Guide
Step 1
Wash, peel, and chop the potatoes, carrots, and onion.
Step 2
Cook until tender, adding black peppercorns and bay leaf.
Step 3
Remove the skin and bones from the fish, cut into small but generous pieces, add to the pot, and cook for about 5 minutes until done.
Step 4
Add the cream. Salt and allspice to taste.
Step 5
Bring the soup to a boil and immediately remove from heat.
Step 6
Add chopped dill or parsley and serve with rye bread.
