Ingredients
- Wheat Flour 5 oz
- Brown Sugar 5 oz
- Chicken Egg 3 pieces
- Safflower Oil 1 tablespoon
- Milk 10 fl oz
- Butter 5 oz
- Oranges 4 pieces
- Citrus Zest Mix 1 tablespoon
- Grand Marnier Liqueur 3 spoons
- Cognac 1 tablespoon
Step-by-Step Guide
Step 1
In a large bowl, mix the flour, 1 tablespoon of sugar, and a pinch of salt. Make a well in the center and add the eggs, two tablespoons of milk, and vegetable oil; stir with a spoon until smooth and homogeneous. Then, slowly pour in the remaining milk while continuing to mix. The batter should be smooth and uniform.
Step 2
In a preheated skillet, fry the thin pancakes on both sides until golden brown.
Step 3
For the sauce, melt the butter and sugar in a deep skillet over low heat, stirring until the sugar begins to dissolve. Then, increase the heat and wait for the mixture to turn brown and start bubbling.
Step 4
Add the zest of lemon and orange, along with freshly squeezed orange juice. Let it sit for 3-4 minutes to thicken, then pour in the Grand Marnier and cognac, warming for a few seconds before reducing the heat.
Step 5
Soak each pancake in the sauce directly in the skillet, fold them in quarters, and leave them in the skillet. Serve 3-4 pancakes per portion with a scoop of vanilla ice cream.
