Tonjiru — Japanese pork and vegetable soup

Ingredients

  • Potato 5 oz
  • Salted pork belly 5 oz
  • Carrot 5 oz
  • Daikon 5 oz
  • Leek 5 oz
  • Scallions 1 bunch
  • "Dry Hondashi Broth" 4 teaspoons
  • Miso Paste 0 oz
  • Sake 0 fl oz
  • Water 0 qt
  • Red Long Chili Peppers to taste
  • Soy Sauce 2 tablespoons

Step-by-Step Guide

Step 1

Cut the pork belly into small thin strips.

Step 2

Slice the leek and carrot into rings. Cut the potato and daikon into small quarters.

Step 3

In a deep pot, heat the oil. Over high heat, quickly sauté the pork pieces, stirring constantly, until the meat turns pale.

Step 4

Then add the vegetables and sauté them for 1 minute.

Step 5

Pour in 1.2 liters of water, dashi, and sake.

Step 6

Bring to a boil and simmer over medium heat for about 10 minutes.

Step 7

In a separate bowl, mix the miso paste with a couple of tablespoons of broth from the pot and soy sauce.

Step 8

Once the soup is ready, turn off the heat and dissolve the miso in it.

Step 9

Let it steep for 2–5 minutes.

Step 10

Serve in bowls, garnished with sliced green onion and a pinch of red pepper.

Step 11

Serve at the table.
