Ingredients

  • Coarsely Ground Rye Flour 2 cups
  • Tagine Spice Mix 1½ teaspoons
  • Olive Oil 5 fl oz
  • Water 5 fl oz
  • Ricotta cheese 1½ cups
  • Goat cheese 5 oz
  • Chicken Egg 1 piece
  • Salt to taste
  • Ground Black Pepper to taste
  • Fresh basil leaves 3 tablespoons
  • Tomatoes 6 pieces
  • Sugar ½ teaspoon

Step-by-Step Guide

Step 1

Preheat the oven to 375°F. Prepare a round baking dish with low sides.

Step 2

In a bowl, mix the flour, 1 teaspoon of Italian spices, 1 teaspoon of salt, and 0.5 teaspoons of pepper, then add 60 ml of olive oil and mix well. Gradually add the ice water, not all at once, to bring the dough together. Gently knead the dough for about 1-2 minutes and shape it into a disk.

Step 3

Transfer the dough to a floured surface and roll it out slightly larger than the size of the dish. Carefully place it in the dish and press it down. Trim the excess from the edges.

Step 4

In a large bowl, use a mixer to beat the ricotta, goat cheese, egg, salt, pepper, and chopped basil until airy. Spread the mixture evenly over the bottom of the dough.

Step 5

Slice the tomatoes into thin rounds and layer them evenly, overlapping, on top of the cheese.

Step 6

Brush the remaining olive oil on top and sprinkle with sugar first, then the remaining Italian spices.

Step 7

Bake the tart for 25-30 minutes until the crust is golden and the tomatoes begin to caramelize. Cool and cut into segments.
