Tomato Soup with Zucchini
Ingredients
- Onion 1 head
- Garlic 1 clove
- Celery salt 5 oz
- Tomatoes 0 lbs
- Courgette 5 oz
- Olive Oil 3 tablespoons
- Basil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a pot with olive oil, add finely chopped onion and garlic. Sauté until soft.
Step 2
Add chopped celery root and zucchini (peeled and seeded). Add a little boiled water.
Step 3
Peel the tomatoes, chop them, and add to the pot. Simmer for a bit, then blend everything with an immersion blender.
Step 4
Season with salt and pepper, and add basil (dried is fine) to taste.
Step 5
Serve with cream and ciabatta.
