Ingredients
- Canned tomatoes 2 cans
- Vegetable Broth 15 fl oz
- Onion 1 head
- Garlic 1 clove
- Celery root 1 piece
- Basil 1 bunch
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Shelled pumpkin seeds to taste
- Grated Parmesan cheese to taste
- Cream Cheese 1 tablespoon
Step-by-Step Guide
Step 1
Heat the oil in a saucepan over medium heat.
Step 2
Add the chopped onion, garlic, and celery root.
Step 3
Cook for 5 minutes.
Step 4
Pour in the broth, add the tomatoes and chopped basil.
Step 5
Bring to a boil, reduce heat, and simmer for another 10 minutes.
Step 6
Season with salt and pepper, then blend with an immersion blender.
Step 7
When serving, add pumpkin seeds.
Step 8
Sprinkle with Parmesan and add a spoonful of cream cheese.
