Step-by-Step Guide
Step 1
Sauté the ribs in olive oil with added salt and pepper until browned.

Then add finely chopped onion, thin slices of garlic, and chorizo, and sauté for 30 seconds.

Add the broth and let the ribs simmer on low heat until the broth reduces by 50-60%. This process will tenderize the meat. After that, add the tomatoes, which should be pureed or finely chopped beforehand.
