  • Tomatoes 15 oz
  • Beans 4 cups
  • Salt a pinch
  • Yogurt to taste
  • Cilantro to taste
  • Pita 1 piece
  • Thai Bird's Eye Chili 1 piece

Step-by-Step Guide

Step 1

Heat oil in a 4-liter pot over medium heat. Add onion and garlic; cook, stirring, until the onion softens and turns golden, about 8 minutes. Add ginger, minced chili pepper, and spices; cook, stirring, until fragrant, about 2 minutes.

Step 2

Stir in the tomatoes and their juice, cooked beans with cooking liquid, and salt. Bring to a boil, reduce heat, and simmer until slightly thickened, about 10 minutes.

Step 3

Coarsely mash a third of the beans in the pot using a potato masher or immersion blender; stir to incorporate into the soup.

Step 4

Garnish with yogurt, cilantro sprigs, and sliced chili pepper; serve with pieces of pita.
