Tomato Soup with Beans
Ingredients
- Plum Tomatoes in Their Own Juice 15 oz
- Onion 2 pieces
- Garlic 1 clove
- Chili Pepper 1 piece
- Tomato Paste 2 tablespoons
- Fresh Thyme 2 sprigs
- Sugar 1 tablespoon
- Apple Cider Vinegar 1 tablespoon
- Water 25 fl oz
- Canned White Beans 1 can
Step-by-Step Guide
Step 1
Finely chop the onion, garlic, and chili pepper.
Step 2
In a heavy-bottomed pot, heat 2 tablespoons of olive oil, sauté the onion, garlic, and chili, stirring, for 5-7 minutes.
Step 3
Add the tomato paste to the pot, stir, and cook for another minute.
Step 4
Add the tomatoes, spices, and water (or broth), bringing the contents of the pot to a boil.
Step 5
Drain the beans in a colander, rinse, and add to the boiling soup.
Step 6
Reduce the heat and simmer for 10-15 minutes.
Step 7
At the end of cooking, add sugar, vinegar, and season with salt and pepper.
