Tomato soup with basil and croutons

Ingredients

  • Water 5 fl oz
  • Tomatoes 20 oz
  • Basil 1 bunch
  • Onion 2 pieces
  • Grated Pecorino Pepato Cheese 0 oz
  • Carrot 2 pieces
  • Olive Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Ciabatta 4 pieces

Step-by-Step Guide

Step 1

Peel the onion and carrot. Finely chop them. In a heavy-bottomed pot, pour in the oil, add the vegetables, and sauté for about 10–15 minutes, until golden and tender.

Step 2

Blanch the tomatoes and peel off their skins. Mash them with a fork and add to the vegetables. Add one cup of water and simmer for another 15 minutes.

Step 3

Remove the stems from the basil and chop it finely. Add it to the vegetables, then season with salt and pepper. If desired, add paprika. Cook for 10 minutes.

Step 4

In another skillet, sauté the slices of ciabatta in olive oil. Ladle the soup into bowls, top with a slice of ciabatta, and sprinkle with Parmesan cheese.
