Tomato Purée

Ingredients

  • Olive Oil 3 tablespoons
  • Garlic 3 cloves
  • Basil to taste
  • Tomatoes 20 oz
  • White bread 20 oz
  • Leek 1 piece
  • Mild Chili Spice 1 piece
  • Salt to taste
  • Chicken Broth 10 fl oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

In a deep saucepan, sauté the leek until soft; if you are using the pepper, add the red chili pepper at the same time.

Step 2

Add the tomatoes and most of the basil leaves. Keep on heat for 5–10 minutes.

Step 3

Add the vegetable broth, season with salt and pepper, and bring back to a boil.

Step 4

Add the pieces of bread and keep on heat for 2 minutes.

Step 5

Remove from heat, cover with a lid, and let sit for an hour.

Step 6

Thoroughly mix, pour into bowls, drizzle with olive oil, and sprinkle with basil (remember that if the leaves are chopped, they will lose some aroma; they should be torn by hand). Add crushed garlic to taste.
