Tomato Fish Soup

Ingredients

  • Cod fillet 5 oz
  • Tomatoes 3 pieces
  • Rice ¼ cup
  • Garlic 1 clove
  • Onion 1 head
  • Olive Oil 1 tablespoon
  • Water 10 fl oz
  • Parsley 1 bunch
  • Mild Chili Spice ¼ piece

Step-by-Step Guide

Step 1

Finely chop the onion and garlic. Cut the tomatoes in half and place them cut side up on a baking sheet. Top the tomatoes with the onion and garlic, then drizzle with olive oil. Bake in a preheated oven at 390°F for 30 minutes.

Step 2

Cook the rice until half done (10–12 minutes).

Step 3

Blend the roasted tomatoes into a puree.

Step 4

In a deep skillet, combine the rice, tomato puree, and pour in a cup of water. Stir and bring to a boil, add salt, then add the cod fillet cut into small pieces. Cook for 10 minutes.

Step 5

One minute before finishing, add finely chopped chili pepper and chopped herbs.
