Ingredients

  • Bacon 4 pieces
  • Butter 0 oz
  • Garlic 4 cloves
  • Onion 1 piece
  • Carrot 1 piece
  • Wheat Flour 1 tablespoon
  • Passata Tomato Sauce 3 tablespoons
  • Chicken Broth 4 cups
  • Thyme 2 sprigs
  • Bay leaf 1 piece
  • Cream ¼ cup
  • Baking Tomatoes 15 oz
  • Salt to taste
  • Green peppercorns to taste
  • Sour Cream to taste
  • Scallions to taste

Step-by-Step Guide

Step 1

Fry the bacon until golden brown, about 15 minutes. Add the butter, minced garlic, onion, and grated carrot. Sauté, stirring, until soft, about 10 minutes.

Step 2

Add the tomato paste and cook for another 3 minutes. Add the flour and mix well until a homogeneous mass forms. Add the broth, thyme, bay leaf, and tomatoes. Bring to a boil, reduce the heat, and cook, stirring, for about 30 minutes.

Step 3

Remove from heat, blend until smooth with a blender, return to the pot, and stir in the cream.

Step 4

Bring to a boil, season with salt and pepper. Pour into bowls; garnish with a spoonful of sour cream, sprinkle with croutons and green onion.
