Ingredients
- Onion to taste
- Garlic 1 clove
- Mild Chili Spice to taste
- Sugar to taste
- Baking Tomatoes 5 oz
- Avocado ¼ piece
- Meyer Lemon Juice 0 fl oz
- Cilantro 1 stem
Step-by-Step Guide
Step 1
Peel and dice the onion and garlic.
Step 2
Sauté the onion and garlic in oil in a pot.
Step 3
Season with chili pepper.
Step 4
Add the tomatoes along with their juice and vegetable broth.
Step 5
Salt, pepper, and season with sugar.
Step 6
Cook the soup for 20 minutes.
Step 7
Blend until smooth and pour back into the pot.
Step 8
Peel the avocado, dice the flesh, and drizzle with lemon juice.
Step 9
Wash the cilantro and pluck the leaves.
Step 10
Add the avocado to the soup and heat through.
Step 11
Pour the soup into a deep bowl and sprinkle with cilantro.
