Tomato and Watermelon Gazpacho

Ingredients

  • Shallot 1 head
  • Orange Bell Peppers 1 piece
  • Olive Oil 0 fl oz
  • Tomatoes 0 lbs
  • Spiced Tomato Juice 15 fl oz
  • TABASCO® ½ spoons
  • Lemongrass 1 stalk
  • Worcestershire Sauce 1 tablespoon
  • Fresh basil leaves 0 oz
  • Watermelon 25 oz
  • Balsamic Vinegar 1 tablespoon
  • Passion Fruit 1 piece
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Finely chop the bell pepper and shallots. Sauté them in a small pot with a little olive oil until the shallots turn golden.

Step 2

Roughly chop the tomatoes. Cut the lemongrass in half and crush or bruise the stems with a knife. Combine the sautéed vegetables, tomatoes, lemongrass, and all other ingredients except for the watermelon and passion fruit in a large bowl, mix well, cover with a lid, and refrigerate overnight.

Step 3

In a blender, puree the watermelon until smooth. Add the watermelon puree and passion fruit pulp to the tomato mixture. Remove the stalks of lemongrass and blend everything together in the blender in batches until smooth.

Step 4

Pass through a fine sieve. Taste to see if more spices are needed, and add balsamic vinegar to taste.

Step 5

Let it cool for at least four hours. Serve chilled, drizzled with olive oil.
