Tomato and Tofu Soup
Ingredients
- Vegetable Broth 4 cups
- Tofu 10 oz
- Vegetable Oil 1 tablespoon
- Shallot 1 head
- Tomatoes 4 pieces
- Sugar 1 teaspoon
- Dried Red Pepper ¼ teaspoon
- Fresh Mushrooms ½ cup
- Tomato Sauce 2 tablespoons
- Tamarind Paste 2 teaspoons
- Minced garlic ½ clove
- Chopped Cilantro 1 tablespoon
Step-by-Step Guide
Step 1
Bring the vegetable broth to a boil. Add the tofu and simmer for 3 minutes.
Step 2
Heat a pan over medium heat. Add the shallot and sauté for 1 minute. Add 8 tomato wedges, sugar, and dried red pepper (to taste).
Step 3
Sauté for another 3 minutes. Transfer the mixture from the pan to the vegetable broth, add the remaining 8 tomato wedges, mushrooms, and tomato sauce.
Step 4
Bring to a boil, then add the tamarind paste.
Step 5
Serve with garlic chives and cilantro.
